Which Red Dot
I have a Burris Fastfire 3 holograph and an Ultradot red dot I am looking at to put on a Weihrauch HW 75 air pistol for indoor bullseye shooting. The Ultradot is what I have used in the past with .22 and .45 with great satisfaction but the Fast Fire is much smaller and lighter. Is it still true that Bullseye shooters mostly use the red dot type and not holographic, and if so, why?

Yes,
Dot due to the automatic centering of concentric circles, and better protection from sun and weather

+1 to James' comment. center the dot in a circle in a circle
The smaller field of view means less distractions.
Very few holographic sights have click adjustments and those that do are kind of soft and hard to feel. That would be OK for your application and most 22's but if you are adjusting between 25 and 50 yds I have not seen one that is repeatable enough for our sport. Full disclosure I haven't tried any of the really expensive holo sights, but have tried a few of the mid-range sights.

Re: Which Red Dot
The Fastfire 3 is a nice dot. I have several of them on non match pistols. The most aggravating fault they have for me is the very limited choices they have for dot intensity. Too dim, too bright, almost bright enough and automatic. Automatic just switches to those other 3 choices. And often when you don't want it to. They work great on my XDM and a 380Ez. Wouldn't be my choice for precision shooting.
