Which front sight should I get?

I bought a Springfield Armory 1911 Range Officer. It has a fiber optic front sight and I would like to change it to a black front sight as that is what I have gotten used to. I see that Kensight makes one at a good price. There is a few questions I have about this. Is this something that can be installed by myself? Would it be best to get the tallest one? Does the shape of the sight matter(serrated blade vs. partridge blade)?

Front sights are a pure preference thing. The height of the sight depends on your hold to an extent, if the fiber optic sight height works for your hold (sub six, line of white, center mass, whatever you think works best for you) just match it for the new sight. Changing front sights can be a bit challenging, but not impossible. Lots of special tools exist that make it easier.

The Patridge design is the quintessential front sight for target shooting.  Its design helps minimize reflection making it easier to focus on.
